Years ago, during the time when we ran a little coffee near the beach in Goa, we used to make and prepare cookies for our guests.
The cookies were most popular among our International guests, travelers and long-term foreign locals (as we would call them), who would go crazy for a piece of home.
Often-while, a group of young Indians from other states or young couples would come by and take a seat in our cozy, colorful coffee house.
They would look around and take pictures, and they would point at the cookies in the jars.
Then they would ask me what those were, and I would explain to them that these were traditional European cookies such as Linzer Augen, Vanillekipferl, and Spritz cookies.
At that point, the big brown eyes would usually have a glimmer in them, and you could literately hear a drool while the hand would stretch out to open the jar.
However, in that same moment, they would ask... “These are cookies without eggs?”,
and that's where I had to disappoint my eggless loving customers with a firm “No”.
Discouraged as they were, they usually got back to their place, had a banana Lassi or mosambi (sweet lime) juice and left without another food-related thought.
Sometimes we had customers who thought differently.
For example, the time when a friend of ours, (Hi Gilroy!), from Bombay, came to Goa with a small white Tata bus with his whole Zee TV department crew.
They came, they had 40 sausage and chicken pork rolls finished all the cookies in the 4 big jars and took 3 bottles of 2 litters each full of freshly pressed ABC Juice and left with the bus by Singing the 'Maka Naka' song and adding Mumbai at the end of the song.
“I don't want Bombay”, - It was a declaration of love for Goa and a realization that they had to drive back home 600 km to the city after a short 2 day trip to Goa.
50 Percent of our customers were fine with food made for omnivores, however, we often still had customers who believed in a vegan lifestyle.
Of course one ought to respect this, so that's when I started to prepare eggless cookie recipes.
Some of our traditional cookies are without eggs, yet there are enough cookie recipes that shouldn't be made without eggs such as Kokosbusserl cookies.
Therefore, I decided to create another cookies collection but this time just with various eggless cookies.
