Homemade veggie burgers?


Why yes please!

You can't beat them and today I'm sharing my latest veggie burger recipe, for spiced chickpea, carrot and coriander burgers. I whizzed them up in my blender and they are totally dairy free and vegan.

A good veggie burger really doesn't need egg to bind it or any dairy. The vegetables and pulses with spices are tasty enough and the chickpeas in this burger are the binder.

These burgers are fresh, tasty and fast!

These are really simple burgers made with tinned chickpeas, carrots. spring onions, garlic, herbs, spices, peanut butter and oats.

A really easy recipe, but they taste great. The burgers took minutes to make and a few more to cook. I served with on buns with salad leaves, cucumber, pickled beetroot and American mustard, but you could add your favourite toppings.


How healthy?

Very healthy! Even better they are only 257 calories each. If you were really watching your weight, I'd say leave out the peanut butter which would save you another 24 calories per burger, taking them down to 233 calories each. Not bad! They are also high in protein, vitamin A and Iron, which has to be a win.

Burgers in a blender?

I used my blender to make these burgers. I'm a great fan of quick meals as you know.

Actually I've upgraded my blender to the Optimum G2.3 blender from Froothie. Let me tell you a bit more about it.

The Optimum G2.3

  1. It has an induction motor so it's a lot quieter than other power blenders.
  2. It has 6 blades for a really smooth blender, even with tough greens or nuts.
  3. It has 1500w of power
  4. It has a second smaller jug for recipes like nut butter, hummus and pesto.
  5. The small jug has two blades that scrape down the sides as it blends.
  6. It self cleans in seconds. Just add some hot water from the kettle and a few drops of washing liquid, then blend.
  7. It has 6 pre-programmed one-touch settings for Fruit, Sorbet, Vegetables, Soup and Grind.
  8. It has a lifetime motor and 5 year parts guarantee.
  9. It rocks! (and can blend rocks!)

I love that it is much quieter than my last blender, but still has the power. In fact it's even more powerful. The pre-programmed buttons in the digital display make blending a breeze and it's so easy to clean. The big bonus is the free second jug which scrapes down the sides as it blends, making it great for nut butters and hummus.

Spiced Chickpea, Carrot and Coriander Burgers

An easy burger recipe that can be made in a power blender or food processor. From blender to table in 15 minutes and all made with fresh tasty ingredients. Cook from fresh or freeze for another day.These burgers are suitable for a vegetarian, vegan or dairy free diet.

Ingredients

  • 2 x 400g tins chickpeas, drained and rinsed
  • 1 medium carrot, cut into chunks
  • 2 spring onions
  • 1 clove garlic
  • 2 tbsp peanut butter
  • juice of half a lemon
  • a handful fresh coriander
  • 2 tsp harissa powder
  • 2 tsp ground cumin
  • 45g/½ cup porridge oats
  • 2 tbsp flax seeds
  • a good grinding of black pepper

Instructions

1. Drain and rinse the chickpeas, top and tail the spring onions and peel the carrot and chop into chunks.

2. Pop all the ingredients into a blender or food processor and blend until fairly smooth.
3. Shape into 6 burgers.
4. Fry or bake the burgers until crisp, then serve on toasted burger buns with your favourite toppings.
5. Enjoy!
